The researcher Eva López Rituerto has visited the University of Almería to offer a conference within the Scientific Fridays, cycle of conferences organized by the Faculty of Experimental Sciences. The head of the Nuclear Magnetic Resonance Area of ??Haro Station says that belonging to the global network allows the wine sector “to certify the wines in origin and destination, offering the technique that is used a total security, because the results of the analysis will be the Same in any country of the world”.
Throughout his talk, López Rituerto has shed light on a leading technique in the field of oenology, magnetic resonance, more commonly known as the ‘fingerprint’ of wine. He has revealed that the accredited analyzes in enology are very important, since they become a letter of presentation in any market of the world, which in turn allows to offer security to the companies.
In addition, the promoter of this method that allows obtaining the fingerprint of the wines in order to guarantee the authenticity and provenance of the product has explained that the obtaining of this DNA “is a very valuable mechanism to control frauds and falsifications”.
Eva López has also explained that the research in which the Wine Station of Haro works, which is a reference in the analysis of the fingerprint of wines, uses Wine-Profiling, an apparatus that allows, through chemical analysis, to identify , Simultaneously, about 50 compounds from each wine sample. “That analysis can confirm the origin and authenticity of the wine and also verify if what the data says the label of the bottle on the wine is true.”
