The International Congress Gastronomy and Health in its third edition, will bring to Zaragoza on 8 and 9 November to a roster of experts in the field. Marco Gobbetti talking about bread, Gerardo Gallego and Paul Chavarriaga trying biosecurity and Juan Luis Arsuaga revealing what we ate, complete an attractive program. Cooks Francis Paniego, Roberto Flore, Salvador Brugués, Firo Vázquez and Marc Puig -Pui, will offer their work on cooking and health.
The Scientific Committee is composed of a prestigious group of researchers and scientists: Manuel Toharia, Rosa Oria, Miguel Angel Almodovar, Toni Massanés, Jorge Pastor, José Miguel Mulet and Jorge Ruiz.
International speakers of great depth in matters such as bread, extra virgin olive oil or the latest research on food biosafety, will offer and debate on them. Thus, Marco Gobbetti, considered one of the greatest experts in the growing stock, together with the world president of the prestigious Club Richemont (Lucerne / Switzerland), Jorge Pastor, will talk about bread.
Two scientists from CIAT (International Center for Tropical Agriculture, Cali in Colombia,
an institution funded by the Bill & Melinda Gates Foundation and the Rockefeller Foundation), Gerardo Gallego and Paul Chavarriaga, will discuss how to modulate genes according to the needs of CIAT breeders in rice, beans, cassava, grasses and other species. Nutrition will also be the subject of debate in the hands of great experts such as Luis Alberto Moreno, from Zaragoza; the alimentary system of the hand of Yvonne Colomer of the Triptolemos Foundation. or the transgenic ones by José Miguel Mulet, will be other of the questions and subjects that will be seen during the encounter that with this third edition consolidates its singularity.
